Our story
Founded by best friends Matteo Caloia and Kai. After a serious accident, Matteo turned to Parmesan rind, a childhood favorite, for protein and calcium during recovery, but wished it had more crunch. About a year later he and Kai began experimenting with small batches in their University of Chicago dorm. After friends kept asking for more, they built the product around the idea of a snack that is oven baked, protein packed, naturally lactose free, and made from real aged cheese.
